One-Pan Honey Garlic Chicken & Veggies: A Simple, Balanced Dinner for Women Over 40

If you're a busy woman over 40, you don't need another complicated recipe that requires a long list of ingredients and hours in the kitchen.
Sometimes, the best meals are the simplest ones.
This One-Pan Honey Garlic Chicken & Veggies is one of my favorite types of meals because it brings together protein, colorful vegetables, healthy fats and carbohydrates in one easy, flavorful dish.
And the best part?

As we get older, supporting our bodies with adequate nutrition becomes increasingly important. That doesn't mean we need to follow a restrictive diet or make every meal complicated.

I recommend serving this meal with ½ cup of cooked jasmine rice or brown rice.
Carbohydrates aren't something you need to fear. They can be an important source of energy and can absolutely be part of a balanced nutrition plan.
🫒 Healthy Fats
A little olive oil and sesame oil add flavor while contributing healthy fats to the meal.
The goal isn't to eliminate fats—it's to include them thoughtfully as part of an overall balanced diet.
🍯 One-Pan Honey Garlic Chicken & Veggies
Servings: 4
Prep Time: 10 minutes
Cook Time: 20–25 minutes
Ingredients
For the Chicken
1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
1 tbsp olive oil
Salt and pepper to taste
For the Vegetables
2 cups broccoli florets
1 cup baby carrots
1 red bell pepper, sliced
1 cup snap peas
For the Honey Garlic Sauce
3 cloves garlic, minced
2 tbsp low-sodium soy sauce
1 tbsp honey
1 tsp sesame oil
1 tsp cornstarch (optional, for thickening)
Directions
1. Preheat the oven
Preheat your oven to 400°F.
2. Make the sauce
In a small bowl, whisk together the minced garlic, low-sodium soy sauce, honey, sesame oil and cornstarch, if using.
3. Add the chicken and vegetables
Place the chicken, broccoli, carrots, red bell pepper and snap peas on a large sheet pan.
4. Add the olive oil
Drizzle the chicken and vegetables with olive oil and season lightly with salt and pepper.
5. Add the sauce
Pour the honey garlic sauce over the chicken and vegetables. Toss everything together until evenly coated.
6. Bake
Bake for 20–25 minutes, or until the chicken reaches an internal temperature of 165°F.
7. Serve
Serve over ½ cup cooked jasmine rice or brown rice.
